Mum’s Ginger Tea by Linda Phan

‘Tis the season for family, food and… flu!!! I do my best to keep the flu at bay but with all the kids coming over this holiday, I need to be extra diligent! This is a recipe I learned from my mum. Anytime I felt under the weather, she would whip up this tea that was sure to soothe my sore throat (and heart.)

Ingredients:
2 inch piece of ginger
1 egg
2 cups of water
2 tablespoons of honey (raw local honey if possible)
1 lemon
[Serves 2]

Peel ginger and grate (the finer the better)
Toss ginger into saucepan filled with 2 cups of water. Bring to boil.
Let it simmer for 10 minutes.

In the meantime, mix lemon juice and honey into your mugs.

Strain the ginger tea through a fine sieve to get rid of the ginger pulp (unless you like it extra potent!!)
Pour back into saucepan.
Crack egg into the tea and give it a little swirl.
Bring tea to a boil again.

Pour into mugs and serve hot!

Served best with a cozy blanket and a classic Christmas movie!
